Mama Pat’s 5 hour Stew

Ingredients:
1 1/2 lb cubed grass fed stew meat
1 sm can diced tomatoes
6 large carrots cut into large pieces
1 chopped onion
3 tbsp tapioca flour
1 tbsp salt
1/2 tsp garlic salt
pepper to taste
2 lbs red potatoes (add in last hour)

Directions:

Mama Pat’s Pecan-Maple Chicken Delight!

Preparation Time 10-15 mins
Total Time 30 mins
Makes 4 servings

INGREDIENTS

4 boneless skinless chicken breasts (about 1 ¼ lb)

¼ C. pure maple or maple-flavored syrup

2 T. mayonnaise

½ C. plain panko crispy bread crumbs

½ C. finely chopped pecans

1.  Heat oven to 400 F.  Line baking sheet with foil; spray with cooking spray.  Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about ½-inch thick.

A rich creamy chicken sauce is rolled in croissants and baked to form delicious puffs.  Wonderful for get togethers!

Blueberry Buttermilk Coffee Cake

This recipe is one of my ABSOLUTE favorites!  It comes out very moist.  The orange peel is an important ingredient that really makes the taste fantastic.  I have used a few substitutes for it though.  Lemon peel works and of course, the extracts instead of the peels is an acceptable substitute if you don’t have an orange on hand.

HOT WING DIP

Keep this one in mind for the football fans in your family!

Prep: 10 min
Cook Time 1 hr

Yield:  4-1/2 cups

2 cups shredded cooked chicken
1 pkg (8 oz) cream cheese, cubed
2cups (8 oz) shredded cheddar cheese
1 cup ranch salad dressing
1/4 cup of Tabasco (this was PLENTY of Tabasco for me but I’m not a person that loves things really hot.  I recommend doing this to taste.  You can always add more!)

Peanut Butter Dip with a Bit o’ Honey!

This dip isn’t just for kids!  This is a great quick and easy dip to whip up for guests of all ages.  If you have peanut allergies but you can eat almonds, try substituting the peanut butter for almond butter!

1/2 Cup Peanut Butter

1/4 Cup Honey

1 tsp cinnamon

Combine ingredients and mix thoroughly.  Makes a fantastic dip for pretzels or veggies!

ROAST PORK WITH APPLES AND ONIONS

This fabulous Roast Pork with Apples and Onions recipe is a great idea for this holiday season.  It sounds festive and yummy!
Prep Time: 25 min
Bake: 1 hr  + standing time

1 boneless whole pork loin roast (2lbs)
1/4 tsp salt
1/4 tsp pepper
1 Tbsp olive oil

Turkey (or Chicken) Sheperd’s Pie

Ingredients

* 1/4 cup plus 2 Tbs. butter or margarine
* 1 onion, cut into thin slices (this is what really makes it great)
* 3 cups chopped and cooked mixed vegetables, such as carrots, cauliflower, and peas (I usually use carrots and peas)
